I have been baking since I was four years old. It's always been a passion of mine. The creative flow, the freedom, and of course the delicious tastes and smells. I remember waking up before my parents and getting a cake box out of the pantry and mixing it up. I would even preheat the oven! Then I would wake up my mom and she would help me put it in the pan and put it in the oven. Now, I do it all myself ;) from making the mix from scratch-no box mixes here, folks!-to baking it, and executing the final steps such as making the frosting and fillings, and decorating the sweet. When I bring something to a family party etc., I always get comments about how everything always turns out so well. To be fair, I suppose I just have a knack for it. Although I've been through lots of trial and error, it has always been second nature to me. Baking, as well as cooking. I love to make many, many meals for my family and try new things. It's kind of a stress relief, just making it. It's so calming, putting the ingredients in a bowl, mixing it, just the whole process. It's... freeing.
Like I said, I have been baking since I was 4 years old. But the journey hasn't been easy... I got diagnosed with celiac disease in 2015. I was 11 years old at the time. My life got flipped upside down because I could no longer enjoy the things I loved. And life just got a lot harder. I had to be way more intentional with what I was eating. I couldn't eat cake from a party, and I couldn't enjoy pizza on a Friday night after school. Not to mention when we went out to eat I couldn't get the fun foods because they had wheat in them. It's been 6 years now and I have learned so much. What I can eat, what I enjoy eating, what's yummy, what's... not so yummy. Just lots of trial and error. Now, it's not too bad.
Because I was diagnosed with celiac disease and was actively baking at that point in my life, I had to switch from what I was doing, and figure out new ways to make sweets. So, I started off just using gluten free cake mixes. But, they didn't work out so well... So, I decided that I would try baking from scratch. It was different, but not any worse. It took more time, but it tasted better. So, I started only making recipes from scratch. And everyone loved it! I got baking pans and utensils for Christmas presents, and started doing new things in regard to baking.
Jump forward to January 2021, a family friend asked me to make a birthday cake for one of her sons. She said she wanted to buy it from me! I was so excited and grateful for this opportunity. Since then, I have been selling my sweets! It has been such an incredible journey. I am eternally grateful for everyone who has helped me get here, and I can not wait for what the future holds.
